I've started since a while working on php compiling.
Having the basic package is not an issue. The problem is adding imap or many modules and that require finding the right dependencies/libs. Not an easy task and may depend on OS. Roundcube require IMAP for example. Also once you use own compiled PHP you should maintain it and upgrade it your self. The good side it won't break packages dependencies like on centos remi can do.
