Webmail Configuration

Hello, i was wandering if it is possible the following scenario :
On my server i have some customers, using most of the services, including email.
One of them, is using another company for webhosting because their website is written in Ruby on Rails.
They have on that company also their pop and imap servers, and the dns management. But they don't have webmail client. So, what do you think is the best way to provide that service to them ? Is it possible to configure the webmail, only for that customer to use a 3rd party record ? Or am i supposed to change the Domain Records for MX to my services ?
(The first scenario is more lightweight for me )
