You don't really need to completely disable them, you can just go into Module Admin and disable the modules you do not use like webmail, aliases, forwards, etc. Then they won't show up in your panel. To disable them would just require you to disable the services from starting. Removing them completely is NOT recommended. In case you decide to use them in the future for any reason. You would have to re-install the entire panel if they are removed.
