I'm a NOOB of course. Checked the Announcements and it says to create a sub-domain BEFORE starting installation of Sentora. Went over to my domain Registrar Namecheap, and can only create sub-domains if I use their DNS. I searched at this Forum first (possibly used wrong search words), is there a tutorial for how to create a sub domain with my VPS IP before I start installation of Sentora?

You mean you point DNS entry to VPS.
You need to check namecheap DNS management feature allowing you to point an A record to server IP usually would be panel.domaine.com A record point to IP (x.x.x.x). M B
