There is no rollback. You will have to manually install an older version and remove auto-ip module.

RE: [MODULE] phpMyAdmin-AU (Auto-Update)
phpMyAdmin 4.9.6 causes error 500 with message in logs:
Code:
0] PHP Parse error:  syntax error, unexpected ':', expecting '{' in /etc/sentora/panel/etc/apps/phpmyadmin/vendor/symfony/polyfill-php80/bootstrap.php on line 23
Latest phpmyadmin which is version 5.0.3 is a no go since it forces the requirement of php 7.4+

Downgrading to 4.9.5 fixed the issue. This autoupdater plugin will stay disabled for now on my server.

UPDATE: (15.okt.2020)
https://github.com/phpmyadmin/phpmyadmin/issues/16399

UPDATE: (17.okt.2020)
New version is available fixing this issue. 4.9.7

Do what? Roll back to a previous version? I am not sure since I haven't tried it. Maybe the post before yours he may remember since he had to do it.
